Ingredients
  

Chili Base
  • 1 tablespoon olive oil a splash of oil adds richness
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 whole bell pepper diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans drained and rinsed
Spices
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
For Serving
  • shredded cheese for topping
  • sour cream or Greek yogurt for topping
  • fresh cilantro chopped

Method
 

Cooking Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and diced bell pepper to the pot, and cook for about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Pour in the can of diced tomatoes (with juice) and the drained kidney beans.
  5. Sprinkle in the chili powder, cumin, paprika, salt, and pepper, and stir thoroughly.
  6. Let the chili cook for about 10 minutes, uncovered.
  7. Ladle the chili into bowls and top with garnishes.
