  • 1 can (14.5 oz) diced tomatoes use fire-roasted for extra depth
  • 2 tbsp extra virgin olive oil brings together flavors
  • 1 tsp Italian seasoning feel free to substitute with fresh herbs
  • 1 cup fresh basil leaves, chopped the backbone of this dish
For the Topping
  • ½ cup grated Parmesan cheese for the cheesy crust

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. Combine diced tomatoes (including their juices), minced garlic, olive oil, Italian seasoning, and half of the chopped basil in a bowl. Stir well to mix.
  4. Arrange the seasoned chicken in the prepared baking dish. Pour the tomato mixture over the chicken and sprinkle with grated Parmesan cheese.
  5. Bake in the preheated oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. Rest the chicken for a few minutes after baking. Garnish with the remaining basil before serving.
