- Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
- Mix flour and baking powder in a bowl. Cut in cold, cubed butter until the mixture resembles coarse crumbs. Stir in milk until just combined.
- Roll out the dough on a floured surface to about 1 inch thick, then cut into rounds. Place on the baking sheet and bake for 12-15 minutes.
- Cook bacon or sausage in a skillet over medium heat until crispy. Set aside on paper towels.
- Scramble the eggs in the same skillet until just set, stirring gently.
- Assemble the sandwiches by slicing biscuits in half and layering with scrambled eggs, bacon or sausage, and cheese. Serve warm.
