For the Cabbage and Lentils
  • 1 medium Green Cabbage sliced
  • 1 cup Green or Brown Lentils rinsed
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Low-Sodium Vegetable Broth
For the Seasoning
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Steps
  1. In a large pot over medium heat, add olive oil. Sauté the chopped onion until translucent, about 5 minutes.
  2. Stir in the minced garlic, ground cumin, and smoked paprika. Cook for another minute until fragrant.
  3. Add the sliced cabbage and rinsed lentils to the pot. Mix well.
  4. Add the vegetable broth, covering the mixture by an inch. Bring it to a simmer, then reduce heat to low and cover. Cook for about 30 minutes, or until the lentils are tender.
  5. Check for doneness and add salt and pepper as needed before serving warm.
