How to Make Cabbage Soup
- Warm the olive oil in a large pot over medium heat. Allow it to shimmer slightly, then add the diced onions. Sauté the onions for about 5 minutes, or until they turn translucent and fragrant.
- Toss in the sliced carrots and minced garlic. Cook this aromatic mixture for another 3-4 minutes, letting the flavors mingle and deepen as the carrots begin to soften.
- Stir in the chopped green cabbage, ensuring it's well coated with the onion-garlic mixture. Pour in the vegetable broth and bring everything to a gentle simmer.
- Add thyme, bay leaves, salt, and pepper to the pot. Simmer the soup uncovered for about 30 minutes, or until the vegetables are tender yet retain their enticing crunch.
- Before serving, taste your cabbage soup and adjust the seasoning if needed.
