How to Make Caprese Pesto Puff Pastry Bites
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a floured surface. Cut it into 4-inch squares.
  3. Spoon a dollop of pesto sauce into the center of each square. Top with halved cherry tomatoes, mozzarella balls, and basil leaves.
  4. Fold each square into triangles or rectangles, sealing the edges firmly.
  5. Whisk the egg with a splash of water, then brush this mixture over each pastry.
  6. Bake for 15-20 minutes until puffed and golden brown. Allow to cool slightly before serving.
