How to Make Cherry Cheesecake Cookie Cups
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with nonstick spray or liners.
- Cream together the softened butter, granulated sugar, brown sugar, and vanilla in a mixing bowl until fluffy. Add the egg and mix well.
- Combine the flour and baking powder in a separate bowl; gradually add this dry mixture to the wet ingredients until just combined.
- Scoop about two tablespoons of dough into each muffin cup and gently press down to shape.
- Bake for 10-12 minutes until golden around the edges and slightly soft on top. Cool slightly before removing from the tin.
- Beat the cream cheese until smooth; then add the sour cream and powdered sugar. Mix until velvety and spoon into the cooled cookie cups.
- Top your cookie cups with cherry pie filling before serving.
