Cooking Instructions
  1. Marinate the chicken thighs in soy sauce, vinegar, garlic, bay leaves, and peppercorns for at least 30 minutes.
  2. Sauté the sliced onions in a large skillet over medium heat until translucent, about 5 minutes.
  3. Add the marinated chicken to the skillet and cook for about 5 minutes until starting to brown.
  4. Pour in the remaining marinade and water, bring to a gentle simmer, cover, and cook for 25–30 minutes.
  5. Serve the chicken adobo over steamed rice, drizzling with the sauce.
