How to Make Chicken Tzatziki with Rice
  1. In a bowl, mix olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Add the chicken breasts, ensuring they’re well coated. Allow them to marinate for at least 30 minutes to absorb those delightful flavors.
  2. Grill or bake the marinated chicken until cooked through, approximately 6-7 minutes per side on the grill or about 20-25 minutes in a preheated oven at 400°F. Look for a golden exterior!
  3. Squeeze excess water from the grated cucumber for a thicker sauce. In a bowl, combine Greek yogurt, cucumber, minced garlic, lemon juice, salt, pepper, and oregano. Mix until well blended and creamy.
  4. Prepare the rice according to package instructions, adding a light seasoning of salt to enhance its flavor. The rice will be your comforting base for the dish.
  5. Once the chicken is cooked and rested, slice it into strips. Serve it over the fluffy rice and generously top with the fresh tzatziki sauce for a vibrant finish.
