Method
 

Cooking Instructions
  1. Preheat your grill or skillet over medium-high heat. Season chicken breasts with chipotle powder, salt, and pepper. Grill for 6-7 minutes per side until they reach an internal temperature of 165°F and have nice grill marks.
  2. In a small bowl, whisk together the fresh lime juice, honey, and chopped cilantro until smooth.
  3. While the chicken cools slightly, dice the ripe mangoes and thinly slice the red onion.
  4. Slice the grilled chicken into strips. In a large bowl, combine mixed greens, mango cubes, red onion slices, and chicken strips.
  5. Drizzle the homemade dressing over the salad mixture and toss gently to coat everything evenly. Serve immediately for the freshest flavor and crunch.
