How to Make Chocolate Covered Strawberry Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the unsalted butter, granulated sugar, and brown sugar in a mixing bowl until light and fluffy, about 3-4 minutes.
- Incorporate the large egg into the mixture and beat until fully blended.
- Whisk together the all-purpose flour and baking soda in a separate bowl, then gradually mix into the wet ingredients until just combined.
- Fold in the semi-sweet chocolate chips gently.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing about two inches apart.
- Bake for 10-12 minutes until edges are lightly golden and centers are still soft. Let cool on wire racks.
- Melt additional semi-sweet chocolate, dip half of each cooled cookie into it, and top with chopped fresh strawberries.
- Optional: Drizzle leftover melted chocolate over the cookies.

Notes
For best results, ensure butter is softened and avoid over-mixing the dough to maintain a light texture. Store in an airtight container for optimal freshness.
