How to Make Chocolate Covered Strawberry Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the unsalted butter, granulated sugar, and brown sugar in a mixing bowl until light and fluffy, about 3-4 minutes.
  3. Incorporate the large egg into the mixture and beat until fully blended.
  4. Whisk together the all-purpose flour and baking soda in a separate bowl, then gradually mix into the wet ingredients until just combined.
  5. Fold in the semi-sweet chocolate chips gently.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing about two inches apart.
  7. Bake for 10-12 minutes until edges are lightly golden and centers are still soft. Let cool on wire racks.
  8. Melt additional semi-sweet chocolate, dip half of each cooled cookie into it, and top with chopped fresh strawberries.
  9. Optional: Drizzle leftover melted chocolate over the cookies.
