Method
 

Cupcake Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.

  3. Beat the eggs, milk, vegetable oil, vanilla extract, and peppermint extract together until smooth.
  4. Combine the wet and dry ingredients gradually until just combined.
  5. Fill each cupcake liner two-thirds full with the chocolate batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool completely before frosting them.
  8. Optional: Add crushed peppermint candy on top.
