  • 1 can Full-fat coconut milk
  • 1 cup Low-sodium chicken broth
For the Veggies
  • 1 cup Bell peppers sliced
  • 2 cups Fresh spinach washed
For the Flavor
  • 1 tablespoon Juice of lime
  • 2 teaspoons Curry powder adjust to taste
  • 1 teaspoon Cumin
For Cooking
  • 2 tablespoons Olive oil for sautéing

How to Make Coconut Milk Chicken
  1. Chop the chicken into bite-sized pieces, mince the garlic, grate the ginger, and slice the bell peppers.
  2. Heat olive oil in a large skillet. Add minced garlic and grated ginger, sauté until fragrant for about 1 minute, then add sliced bell peppers.
  3. Add chicken pieces and cook until golden brown on all sides, about 5-7 minutes.
  4. Pour in coconut milk and chicken broth. Stir and bring to a simmer.
  5. Add spinach and simmer for another 10-15 minutes until wilted.
  6. Squeeze lime juice over the dish before serving.
