How to Make Corned Beef & Cabbage Cheese Quesadillas
- In a mixing bowl, bring together the shredded corned beef, finely shredded cabbage, and garlic powder. Mix evenly.
- Preheat a non-stick skillet over medium heat.
- Place one tortilla in the skillet and spread half of the filling mixture on one half of the tortilla. Sprinkle both cheddar and pepper jack cheeses on top.
- Cook for 3-4 minutes until the bottom is golden brown and crispy. Flip and cook the other side for another 3-4 minutes until heated through.
- Remove the quesadilla, let cool slightly, then cut into wedges. Serve warm with sour cream.
