How to Make Corned Beef & Cabbage Cheese Quesadillas
  1. In a mixing bowl, bring together the shredded corned beef, finely shredded cabbage, and garlic powder. Mix evenly.
  2. Preheat a non-stick skillet over medium heat.
  3. Place one tortilla in the skillet and spread half of the filling mixture on one half of the tortilla. Sprinkle both cheddar and pepper jack cheeses on top.
  4. Cook for 3-4 minutes until the bottom is golden brown and crispy. Flip and cook the other side for another 3-4 minutes until heated through.
  5. Remove the quesadilla, let cool slightly, then cut into wedges. Serve warm with sour cream.
