Ingredients
  

For the Chicken
  • 2 pieces Chicken breasts skinless for a healthier option
  • 4 slices Bacon thick-cut for extra crunch
  • to taste Salt
  • to taste Pepper
For the Sauce
  • 8 oz Cream cheese provides a creamy texture
  • 2 cups Chicken broth use low-sodium
  • 3 cloves Garlic freshly minced
For the Gnocchi
  • 1 pkg Gnocchi store-bought or homemade
  • 3 cups Spinach fresh or frozen
For Toppings
  • 1/2 cup Parmesan cheese freshly grated
  • 1/4 cup Fresh parsley chopped

Method
 

Directions
  1. In a large skillet, cook the thick-cut bacon over medium heat until crispy, about 5-7 minutes.
  2. Remove the bacon and set aside; add the diced chicken breasts to the drippings, seasoning with salt and pepper. Cook until golden brown, around 8-10 minutes.
  3. Lower the heat and stir in the minced garlic, cooking for 1 minute until fragrant. Add cream cheese and chicken broth, mixing until smooth.
  4. Stir in the gnocchi and cook until they float, about 3-5 minutes.
  5. Fold in spinach, allowing it to wilt into the sauce, about 2-3 minutes.
  6. Crumble the bacon back into the skillet and mix everything. Adjust seasoning as needed.
  7. Serve the gnocchi in bowls, topping with Parmesan and parsley.
