  • 6 ounces Chorizo sausage Spicy or mild
For the Orzo
  • 1 cup Orzo pasta
For the Creamy Sauce
  • 1 cup Heavy cream Can substitute with half-and-half for a lighter version
  • 2 cups Low-sodium chicken broth
For the Veggies
  • 2 cups Fresh spinach Will wilt in sauce
  • 2 cloves Garlic, minced
  • 1 medium Yellow onion, diced Provides sweetness
For Cooking
  • 2 tablespoons Olive oil For sautéing

How to Make Creamy Chicken Chorizo Orzo
  1. In a large skillet, heat olive oil over medium heat. Add diced chicken breasts seasoned with salt and pepper; cook for about 6-8 minutes until golden brown and cooked through. Remove from skillet.
  2. Add sliced chorizo to the same skillet; cook until slightly crispy, about 3-4 minutes. Remove and set aside.
  3. In the same skillet, add diced onion and minced garlic; sauté for 3-4 minutes until translucent and fragrant.
  4. Stir in heavy cream and chicken broth; mix well and bring to a light simmer.
  5. Add orzo to the creamy mixture and simmer for about 10-12 minutes until al dente, stirring occasionally.
  6. Fold in fresh spinach until wilted, about 1-2 minutes. Return chicken and crispy chorizo to the skillet; mix well.
