Cooking Steps
- In a large pot, warm olive oil or butter over medium heat. Add the diced onion and minced garlic; sauté for about 5 minutes until softened and fragrant.
- Stir in the sliced cremini mushrooms and dried thyme. Cook for around 7 minutes, until the mushrooms turn tender and golden.
- Add the rinsed wild rice and pour in the vegetable broth. Bring this mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 45 minutes, until the wild rice is tender.
- Stir in the heavy cream and season with salt and pepper to taste. Allow it to simmer for an additional 5 minutes.
- Ladle the warm soup into bowls and garnish with fresh herbs if desired. Enjoy!
