For the Soup Base
  • 1 cup Wild rice packed with nutty flavor and texture
  • 8 ounces Cremini mushrooms sliced
  • 1 medium Yellow onion diced
  • 3 cloves Garlic minced
  • 4 cups Vegetable broth low-sodium
For the Creamy Finish
  • 1 cup Heavy cream for lusciousness
  • 1 teaspoon Dried thyme or fresh if available
  • to taste Salt for seasoning
  • to taste Pepper for seasoning
  • 2 tablespoons Olive oil or butter for sautéing

Cooking Steps
  1. In a large pot, warm olive oil or butter over medium heat. Add the diced onion and minced garlic; sauté for about 5 minutes until softened and fragrant.
  2. Stir in the sliced cremini mushrooms and dried thyme. Cook for around 7 minutes, until the mushrooms turn tender and golden.
  3. Add the rinsed wild rice and pour in the vegetable broth. Bring this mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 45 minutes, until the wild rice is tender.
  4. Stir in the heavy cream and season with salt and pepper to taste. Allow it to simmer for an additional 5 minutes.
  5. Ladle the warm soup into bowls and garnish with fresh herbs if desired. Enjoy!
