- Preheat your oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the center with a spoon.
- Sauté the shrimp in olive oil over medium heat for 2-3 minutes until they turn pink.
- Mix the diced bell peppers, finely chopped red onion, minced garlic, dried oregano, and paprika with the sautéed shrimp in a large bowl.
- Fill each zucchini half with the shrimp mixture.
- Top each filled zucchini boat with shredded mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, or until the zucchinis are tender and the cheese is melted.
- Garnish with freshly chopped parsley before serving.
