Method
 

Directions

  2. Slice the zucchinis in half lengthwise and scoop out the center with a spoon.

  4. Mix the diced bell peppers, finely chopped red onion, minced garlic, dried oregano, and paprika with the sautéed shrimp in a large bowl.
  5. Fill each zucchini half with the shrimp mixture.
  6. Top each filled zucchini boat with shredded mozzarella cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the zucchinis are tender and the cheese is melted.
  8. Garnish with freshly chopped parsley before serving.
