- Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper.
- Sauté minced garlic in heated olive oil over medium heat until fragrant, about 1 minute.
- Add the whole peeled tomatoes to the skillet and break them apart with a spoon. Let this simmer for about 5 minutes.
- Stir in the sliced Kalamata olives and capers. Let it cook for another minute.
- Arrange the fish fillets in the prepared baking dish and pour the tomato mixture over them. Season with salt and pepper.
- Bake for 20-25 minutes, or until the fish flakes easily with a fork.
- Serve immediately, drizzled with extra olive oil and optionally garnish with fresh parsley.
