Ingredients
  

For the Fish
  • 4 fillets White fish such as cod or haddock
For the Sauce
  • 2 tablespoons Extra virgin olive oil high-quality
  • 3 cloves Garlic minced
  • 1 can Whole peeled tomatoes
  • 1 cup Kalamata olives sliced
  • 2 tablespoons Capers
  • to taste Salt
  • to taste Pepper

Method
 

Steps
  1. Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. Sauté minced garlic in heated olive oil over medium heat until fragrant, about 1 minute.
  3. Add the whole peeled tomatoes to the skillet and break them apart with a spoon. Let this simmer for about 5 minutes.
  4. Stir in the sliced Kalamata olives and capers. Let it cook for another minute.
  5. Arrange the fish fillets in the prepared baking dish and pour the tomato mixture over them. Season with salt and pepper.
  6. Bake for 20-25 minutes, or until the fish flakes easily with a fork.
  7. Serve immediately, drizzled with extra olive oil and optionally garnish with fresh parsley.

Notes
