Steps to Prepare
- Preheat your oven to 375°F (190°C) and lightly grease your baking dish with olive oil.
- Season the chicken breasts generously with salt, pepper, oregano, and thyme.
- In a skillet over medium heat, add olive oil and sauté the minced garlic until it's fragrant.
- Toss in the chopped red bell pepper and cook until tender, about 3-5 minutes.
- Stir in the halved cherry tomatoes and Kalamata olives, cooking until the tomatoes soften.
- Place the seasoned chicken in the baking dish, layer on the sautéed vegetable mixture, and sprinkle with crumbled feta cheese.
- Cover with foil and bake for 25 minutes, then remove the foil and bake for another 10-15 minutes or until the chicken reaches 165°F (75°C).
