Steps to Prepare
  1. Preheat your oven to 375°F (190°C) and lightly grease your baking dish with olive oil.
  2. Season the chicken breasts generously with salt, pepper, oregano, and thyme.
  3. In a skillet over medium heat, add olive oil and sauté the minced garlic until it's fragrant.
  4. Toss in the chopped red bell pepper and cook until tender, about 3-5 minutes.
  5. Stir in the halved cherry tomatoes and Kalamata olives, cooking until the tomatoes soften.
  6. Place the seasoned chicken in the baking dish, layer on the sautéed vegetable mixture, and sprinkle with crumbled feta cheese.
  7. Cover with foil and bake for 25 minutes, then remove the foil and bake for another 10-15 minutes or until the chicken reaches 165°F (75°C).
