  • 8 oz spaghetti or fettuccine

  • 1 cup fresh basil leaves
  • 3 cloves garlic, minced
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/4 cup toasted pine nuts walnuts can be a substitute
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine, cooking it according to the package instructions until al dente. Drain well and set aside.
  2. In a food processor, combine the fresh basil leaves, minced garlic, lemon juice, olive oil, and toasted pine nuts. Blend until smooth, creating a vibrant green sauce.
  3. Transfer the sauce mixture to a mixing bowl, then add the freshly grated Parmesan cheese. Stir until fully incorporated, seasoning with salt and pepper to your taste.
  4. Pour the creamy sauce over the drained pasta, then toss gently until every strand is beautifully coated.
  5. Serve immediately, topped with extra toasted pine nuts and a sprinkle of Parmesan.
