For the Enchiladas
  • 1 lb Ground beef substitute with ground turkey for a lighter option
  • 1 can Black beans canned beans save time
  • 1 cup Corn fresh or frozen works beautifully
  • 8 pieces Tortillas flour or corn tortillas
  • 1 medium Onion use white or yellow onions
  • 2 cloves Garlic add more if desired
  • 1 packet Taco seasoning homemade is an option
  • 1 cup Cheese cheddar or Mexican blend cheese
For the Sauce
  • 1 cup Enchilada sauce store-bought or homemade
  • 1/4 cup Fresh cilantro for garnish

Method
 

Directions
  1. Prepare the Filling: In a large skillet, sauté chopped onions and minced garlic over medium heat until fragrant. Add ground beef and cook until browned, seasoning with taco seasoning for flavor. Stir in black beans and corn, mixing well.
  2. Warm the Tortillas: Heat your tortillas in a dry skillet for about 30 seconds on each side.
  3. Assemble the Enchiladas: Take a tortilla and spoon a generous portion of the beef mixture onto the center. Roll it up tightly and place it seam-side down in a greased baking dish.
  4. Add the Sauce: Pour enchilada sauce evenly over the rolled enchiladas, sprinkle cheese on top.
  5. Bake: Preheat your oven to 350°F (175°C) and bake the enchiladas uncovered for 20–25 minutes.
  6. Garnish and Serve: Remove from the oven, sprinkle with fresh cilantro, and let sit for a few minutes before serving.
