Method
 

Making the Galette
  1. Preheat your oven to 400°F (200°C).
  2. Combine the flour and 2 tablespoons of sugar in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add cold water gradually, stirring until the dough holds together. Wrap in plastic wrap and chill for 30 minutes.
  4. Roll out the chilled dough on a floured surface into a heart shape, about 1/4-inch thick.
  5. Transfer the rolled-out dough to a parchment-lined baking sheet. Layer the sliced strawberries in the center and sprinkle the remaining sugar on top.
  6. Fold the edges of the dough over the strawberries, leaving the center open.
  7. Bake for 25-30 minutes until golden brown and strawberries are bubbly.
  8. Let it cool slightly before serving, and dust with powdered sugar if desired.
