  • 8 oz pasta can use spaghetti or penne
For the Sauce
  • 1 cup hummus store-bought or homemade
  • 2 tbsp olive oil quality for richness
  • 1 tbsp lemon juice freshly squeezed
  • salt to taste
  • pepper to taste
For the Garnish
  • fresh herbs parsley or basil

Method
 

How to Make Hummus Pasta
  1. Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente, following the package instructions, stirring occasionally for even cooking.
  2. In a mixing bowl, combine the hummus, olive oil, and lemon juice. Whisk until smooth and creamy.
  3. Drain the pasta, but reserve ½ cup of the starchy pasta water. Add the hot pasta to the hummus mixture and stir well.
  4. Gradually mix in the reserved pasta water until you reach your desired creaminess.
  5. Taste and season with salt and pepper. Serve in bowls, garnished with fresh herbs.
  6. Enjoy immediately.
