How to Make Hummus Pasta
- Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente, following the package instructions, stirring occasionally for even cooking.
- In a mixing bowl, combine the hummus, olive oil, and lemon juice. Whisk until smooth and creamy.
- Drain the pasta, but reserve ½ cup of the starchy pasta water. Add the hot pasta to the hummus mixture and stir well.
- Gradually mix in the reserved pasta water until you reach your desired creaminess.
- Taste and season with salt and pepper. Serve in bowls, garnished with fresh herbs.
- Enjoy immediately.
