- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Dice the sweet potatoes into bite-sized cubes. Toss them with olive oil, salt, and pepper.
- Combine maple syrup, Dijon mustard, minced garlic, soy sauce, and olive oil in a bowl to create the marinade.
- Coat the chicken breasts with half of the marinade and allow to soak.
- Roast the sweet potatoes for 20 minutes, then add the chicken and the remaining marinade.
- Continue roasting for an additional 25-30 minutes until the chicken is cooked through and sweet potatoes are tender.
- Serve in bowls with any leftover sauce drizzled on top.
