  • 1 lb Boneless, skinless chicken breasts
  • 2 cloves Fresh garlic minced
  • 1/4 cup Pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 tbsp Low-sodium soy sauce
Sweet Potato Ingredients
  • 2 cups Sweet potatoes diced
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Pepper

Method
 

Preparation Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Dice the sweet potatoes into bite-sized cubes. Toss them with olive oil, salt, and pepper.
  3. Combine maple syrup, Dijon mustard, minced garlic, soy sauce, and olive oil in a bowl to create the marinade.
  4. Coat the chicken breasts with half of the marinade and allow to soak.
  5. Roast the sweet potatoes for 20 minutes, then add the chicken and the remaining marinade.
  6. Continue roasting for an additional 25-30 minutes until the chicken is cooked through and sweet potatoes are tender.
  7. Serve in bowls with any leftover sauce drizzled on top.
