Making the Cookies
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened butter and sugar until fluffy, about 2 minutes.
- Beat in the egg and vanilla extract until well combined.
- Whisk together flour and baking powder, then gradually incorporate into the wet ingredients.
- Divide dough and tint one half with pink gel food coloring, then gently swirl both portions together.
- Scoop dough onto prepared baking sheets, leaving 2 inches between each cookie.
- Bake for 10-12 minutes until edges are golden and centers are soft. Cool on wire racks.
