Method

How to Make Mediterranean Cauliflower Rice Bowl
  1. Begin by rinsing your cauliflower under cool water. Using a food processor or box grater, rice the cauliflower until it resembles small grains, creating a perfect base for your bowl.
  2. Heat 2 tablespoons of extra virgin olive oil in a skillet over medium heat. Add the riced cauliflower and sauté for 5-7 minutes until it’s tender and slightly golden, seasoning with salt and pepper for flavor.
  3. While the cauliflower cooks, chop your cherry tomatoes, cucumber, and red onion into bite-sized pieces. The colors will brighten up your bowl and add to the delightful texture.
  4. In a small bowl, whisk together the remaining olive oil, fresh lemon juice, chopped parsley, mint, salt, and pepper. This dressing will add a refreshing zing to your Mediterranean Cauliflower Rice Bowl.
  5. Layer the sautéed cauliflower at the bottom of your bowl, followed by the vibrant layers of tomatoes, cucumber, red onion, and the crumbled feta cheese on top.
  6. Drizzle the dressing generously over the assembled bowl. Toss everything gently to combine the flavors before serving—each bite will be a harmonious medley of tastes!
