  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract use pure for best flavor
  • 2 large eggs room temperature
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder key for rich flavor
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt to enhance flavors
  • 1/2 cup semi-sweet chocolate chips optional for extra indulgence

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and grease your mini muffin tin.
  2. Melt the unsalted butter in a saucepan over low heat and stir in both sugars.
  3. Cool the mixture slightly, then whisk in the vanilla extract and eggs.
  4. Sift together the flour, cocoa powder, baking powder, and salt in a separate bowl.
  5. Fold the dry ingredients into the wet mixture until just combined; add chocolate chips if desired.
  6. Scoop the batter into the muffin tin, filling each cup about three-quarters full. Bake for 12-15 minutes.
  7. Cool the brownies in the tin briefly before transferring them to a wire rack.
