How to Make Mini Strawberry Palmiers
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface until even, about 1/8-inch thick.
- Combine diced strawberries with granulated sugar and vanilla extract in a bowl.
- Sprinkle some sugar over the pastry before spreading the strawberry mixture evenly on one half.
- Fold the other half of the pastry over the strawberry mixture and gently roll toward the center.
- Brush the rolled pastry with beaten egg.
- Bake in the preheated oven for 15-20 minutes until golden brown and flaky.
- Serve warm or at room temperature.
