How to Make Mini Strawberry Palmiers

  2. Roll out the thawed puff pastry on a lightly floured surface until even, about 1/8-inch thick.
  3. Combine diced strawberries with granulated sugar and vanilla extract in a bowl.
  4. Sprinkle some sugar over the pastry before spreading the strawberry mixture evenly on one half.
  5. Fold the other half of the pastry over the strawberry mixture and gently roll toward the center.
  6. Brush the rolled pastry with beaten egg.
