Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Whisk together 2 cups of all-purpose flour, 1 tsp of baking powder, and a pinch of salt in a bowl until fully combined.
- Cream together ½ cup of softened unsalted butter and ¾ cup of granulated sugar in another bowl until light and fluffy.
- Combine by mixing in 1 large egg and 1 tsp of vanilla extract until well incorporated.
- Incorporate the dry ingredients gradually into the wet mixture until just combined.
- Scoop tablespoon-sized portions onto the lined baking sheets, spacing them a few inches apart.
- Bake for 10-12 minutes or until the edges are golden but the centers remain soft.
Icing
- Mix 1½ cups of powdered sugar with 3 tbsp of milk in a bowl until smooth and pourable.
- Drizzle the icing over the cooled cookies, allowing it to set before serving.
