How to Make No Bake Buckeye Peanut Butter Balls
  1. In a large bowl, combine 1 cup of creamy peanut butter and 1/2 cup of unsalted butter until smooth and well-blended.
  2. Gradually add in 2 cups of powdered sugar and 1 teaspoon of vanilla extract. Stir until everything is fully incorporated and a thick, dough-like consistency forms.
  3. Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper and chill in the freezer for about 15 minutes to firm up.
  4. While the peanut butter balls are chilling, melt 2 cups of semi-sweet chocolate chips and 1 tablespoon of coconut oil in a microwave-safe bowl.
