Making the Cookies
- In a medium bowl, combine 1 cup of rolled oats, ¼ cup of unsweetened cocoa powder, and a pinch of salt. Stir until well mixed.
- Add 1 cup of creamy peanut butter and ½ cup of honey or maple syrup. Mix until thoroughly combined and sticky.
- Pour in 1 teaspoon of vanilla extract and gently stir until fully incorporated.
- Scoop heaping portions of the mixture onto parchment paper, shaping them into your desired cookie form.
- Refrigerate the cookies for at least 30 minutes to firm up.
