  • 3 cloves Fresh garlic, minced
  • 1/4 cup Low-sodium soy sauce
For the Flavoring
  • 1/4 cup Fresh cilantro, chopped
  • 1/4 cup Freshly squeezed lime juice
For the Rice
  • 1 cup Long-grain rice
  • 2 cups Chicken broth
For Cooking
  • 2 tablespoons Olive oil

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Sear the chicken in olive oil over medium-high heat for about 5 minutes on each side.
  4. Whisk together lime juice, soy sauce, minced garlic, chopped cilantro, and chicken broth in a bowl. Pour over seared chicken.
  5. Add the rice around the chicken, pressing it down into the liquid.
  6. Cover the skillet and bake for 25-30 minutes until chicken is cooked and rice is tender.
