How to Make One-Pot Creamy Lemon Pasta
- In a large pot, bring salted water to a rolling boil. Add your fettuccine or spaghetti and cook until al dente, according to package instructions. Drain the pasta, but make sure to reserve 1 cup of the pasta water!
- In the same pot, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, roughly 1 minute.
- Pour in the heavy cream along with the freshly squeezed lemon juice and zest. Stir to combine all the ingredients into a luscious sauce.
- Return the cooked pasta to the pot and add the grated Parmesan cheese and fresh spinach. Toss gently until the pasta is well coated.
- If the sauce feels too thick, gradually add the reserved pasta water until you reach your desired consistency.
- Serve the pasta in bowls and top with additional grated Parmesan and lemon zest if desired.
