  • 8 oz fettuccine or spaghetti choose your favorite pasta shape
For the Sauce
  • 1 cup heavy cream adds richness
  • 2 medium lemons juice and zest
  • 4 cloves garlic minced
For the Finish
  • 1 cup grated Parmesan cheese provides creamy balance
  • 2 cups fresh spinach adds color and nutrition
  • Salt season to taste
  • Pepper season to taste
  • 2 ts olive oil for sautéing garlic

How to Make One-Pot Creamy Lemon Pasta
  1. In a large pot, bring salted water to a rolling boil. Add your fettuccine or spaghetti and cook until al dente, according to package instructions. Drain the pasta, but make sure to reserve 1 cup of the pasta water!
  2. In the same pot, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, roughly 1 minute.
  3. Pour in the heavy cream along with the freshly squeezed lemon juice and zest. Stir to combine all the ingredients into a luscious sauce.
  4. Return the cooked pasta to the pot and add the grated Parmesan cheese and fresh spinach. Toss gently until the pasta is well coated.
  5. If the sauce feels too thick, gradually add the reserved pasta water until you reach your desired consistency.
  6. Serve the pasta in bowls and top with additional grated Parmesan and lemon zest if desired.
