How to Make One-Pot White Bean Mushroom Stew

  2. Add the sliced cremini mushrooms to the pot and cook for approximately 6 minutes until softened and lightly browned. Season gently with salt.
  3. Stir in the drained cannellini beans, vegetable broth, and fresh thyme. Raise the heat to bring it to a gentle simmer, letting the flavors meld.
  4. Gently fold in the spinach or kale, allowing them to wilt for about 5 minutes.
  5. Taste the stew and adjust seasonings as necessary before serving. Top with fresh herbs if desired.
