- Preheat your oven to 325°F (163°C). This ensures an even cooking temperature for your roast.
- Pat the chuck roast dry with paper towels and generously season all sides with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the roast for 4–5 minutes on each side until browned.
- Carefully move the seared roast to a roasting pan. In the same skillet, sauté chopped onions and minced garlic for 3–4 minutes until fragrant, then add them to the roasting pan.
- Pour the beef broth over the roast, then sprinkle with fresh thyme and rosemary.
- Cover the roasting pan tightly with foil or a lid and bake in the preheated oven for about 3 hours, or until the meat is fork-tender.
