Ingredients

For the Potato Stacks
  • 4 medium Russet potatoes thinly sliced
  • 1 cup Freshly grated Parmesan cheese
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 2 tablespoons Fresh rosemary chopped
  • to taste Salt
  • to taste Pepper
Optional Topping
  • 1/2 cup Extra Parmesan cheese for sprinkling on top
  • 2 sprigs Fresh rosemary for garnish

Equipment

  • mandoline or sharp knife
  • Baking dish
  • aluminum foil

Method

Steps to Prepare
  1. Preheat the Oven: Get your oven ready by setting it to 425°F (220°C). Grease your baking dish with nonstick spray or a drizzle of olive oil to prevent sticking.
  2. Slice the Potatoes: Using a mandoline or a sharp knife, thinly slice the russet potatoes. Aim for even, delicate slices so they stack neatly and bake uniformly.
  3. Layer the Ingredients: Begin layering your potato slices in the prepared dish. Alternate each layer with a drizzle of olive oil, a sprinkle of garlic powder, chopped rosemary, and a generous dusting of Parmesan cheese. Don't forget to season with salt and pepper!
  4. Cover and Bake: Once stacked, cover the dish with aluminum foil. Bake for about 30 minutes to allow the potatoes to soften.
  5. Crisp Up the Stacks: After 30 minutes, carefully remove the foil and continue baking for an additional 15-20 minutes. Look for that lovely golden brown and crispy texture on top!
  6. Cool and Garnish: Let your Parmesan Potato Stacks cool slightly before serving. For an extra touch, garnish with additional rosemary or Parmesan cheese if desired.
