Preparation
- Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
- Roll out the thawed puff pastry on a floured surface, then cut into 3-inch squares.
- Spoon caramelized onions and a piece of brie onto each pastry square, then sprinkle chopped rosemary on top.
- Fold the corners of each pastry square over the filling and pinch to seal tightly.
- Whisk the egg with water and brush this egg wash over each sealed pastry.
- Bake the bites for 15–20 minutes or until they’re puffed up and golden brown.
