Ingredients
  

Puff Pastry
  • 1 sheet puff pastry thawed
Filling
  • 4 oz brie cheese cut into small pieces
  • 1 cup caramelized onions to balance the brie
  • 1 tbsp fresh rosemary chopped
Egg Wash
  • 1 egg egg for a golden crust
  • 1 tbsp water mixed with egg

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  2. Roll out the thawed puff pastry on a floured surface, then cut into 3-inch squares.
  3. Spoon caramelized onions and a piece of brie onto each pastry square, then sprinkle chopped rosemary on top.
  4. Fold the corners of each pastry square over the filling and pinch to seal tightly.
  5. Whisk the egg with water and brush this egg wash over each sealed pastry.
  6. Bake the bites for 15–20 minutes or until they’re puffed up and golden brown.
