Ingredients
  

For the Base
  • 6 slices day-old rye bread Cubed
  • 1 pound lean corned beef Shredded
For the Filling
  • 1 cup sauerkraut Drained
  • 2 cups Swiss cheese Shredded
For the Dressing
  • 1 cup Thousand Island dressing
  • 1 teaspoon caraway seeds Optional
For Greasing
  • 1 tablespoon butter

Method
 

How to Make Reuben Casserole
  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.
  2. Layer half of the rye bread cubes in the bottom of the greased dish.
  3. Spread half of the shredded corned beef over the bread.
  4. Add half of the drained sauerkraut followed by half of the shredded Swiss cheese.
  5. Repeat the layering process with the remaining rye bread cubes, corned beef, sauerkraut, and Swiss cheese.
  6. Drizzle Thousand Island dressing generously over the top and sprinkle caraway seeds if using.
  7. Cover with aluminum foil and bake for 30 minutes.
  8. Uncover and bake for an additional 15-20 minutes until bubbly and golden brown.
  9. Allow to cool for a few minutes before slicing.
