Ingredients
  

For the Sweet Potatoes
  • 2 large Sweet Potatoes about 800g
  • 2 tbsp Extra Virgin Olive Oil for roasting
  • Salt to taste
  • Pepper to taste
For the Topping
  • 4 oz Goat Cheese crumbled
  • 2 tsp Fresh Rosemary finely chopped

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. Toss the sweet potato cubes in a bowl with olive oil, salt, pepper, and chopped rosemary until well coated.
  4. Spread the seasoned sweet potato cubes on a baking sheet lined with parchment paper.
  5. Roast for 25-30 minutes, turning halfway, until they are tender and golden brown.
  6. Sprinkle crumbled goat cheese over the hot sweet potatoes five minutes before they finish roasting.
  7. Serve warm, garnished with additional rosemary if desired.
