Ingredients
  

For the Salad
  • 4 fillets Salmon Fresh, skin-on
  • 4 cups Mixed greens Combination of romaine lettuce and baby spinach
  • 1 cup Cherry tomatoes Halved
  • 1 cup Cucumber Diced
  • 1 avocado Avocado Diced
For the Dressing
  • 1/4 cup Olive oil
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1 tablespoon Dijon mustard
  • to taste Salt
  • to taste Pepper

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the skin-on salmon fillets on the prepared sheet. Season with salt and pepper, then drizzle with olive oil.
  3. Bake the salmon for 12-15 minutes, or until flaky and cooked through.
  4. Chop mixed greens into bite-sized pieces.
  5. Dice the cucumber and halve the cherry tomatoes.
  6. In a small bowl, whisk together lemon juice, Dijon mustard, olive oil, salt, and pepper. Adjust seasoning to taste.
  7. Flake the salmon with two forks and set aside.
  8. In a large bowl, layer the greens, cucumber, tomatoes, avocado, and flaked salmon.
  9. Drizzle dressing over the salad and toss gently to combine. Serve immediately.
