How to Make Salmon Soup
- In a large pot over medium heat, add olive oil and sauté the diced onions until they are translucent, about 5 minutes.
- Toss in minced garlic and stir for an additional minute.
- Incorporate diced potatoes and carrots, then pour in the vegetable broth. Bring to a gentle boil, stirring occasionally until the vegetables are tender, approximately 15 minutes.
- Gently add chopped salmon fillets into the pot. Simmer on low heat for about 10 minutes or until the fish flakes easily with a fork.
- Stir in the freshly chopped dill or parsley along with lemon juice just before serving.
- Ladle into bowls lovely and warm, and garnish with extra herbs if desired.

Notes
For a rich flavor, sauté the onions until translucent. Be mindful not to overcook the salmon; simmer it just until flaky. Use waxy potatoes for better texture, and add herbs and lemon juice just before serving for freshness.
