  • 4 cups Chicken or vegetable broth low-sodium recommended
  • 2 Bay leaves remove before serving
  • 2 tbl Fresh thyme fresh preferred for brightness

How to Make Sausage and White Bean Soup
  1. Prepare ingredients: Dice the onion, carrots, celery, and mince the garlic.
  2. Cook sausage: In a pot, over medium heat, crumble and cook the sausage until browned, about 5-7 minutes.
  3. Sauté veggies: Add onion, carrots, and celery. Sauté for 5-6 minutes until tender.
  4. Add garlic: Stir in minced garlic and cook for an additional minute.
  5. Combine broth and beans: Add broth, white beans, bay leaves, and thyme. Bring to simmer and cook for 20-25 minutes.
  6. Season: Taste and season with salt and pepper.
  7. Serve hot: Remove bay leaves and ladle the soup into bowls. Garnish with toppings.
