For the Pasta
  • 8 oz pasta any short pasta like penne or fusilli
For the Sauce
  • 1 lb shrimp peeled and deveined
  • 1 can (14.5 oz) diced tomatoes opt for fire-roasted
  • 1 cup heavy cream for a lighter option, use half-and-half
  • 4 cloves garlic minced
  • 1 medium onion diced
  • 2 tbsp olive oil can be substituted with butter
  • ½ cup grated Parmesan cheese freshly grated
  • Salt to taste
  • Pepper to taste
For the Garnish
  • 1 cup fresh basil chopped

Method
 

Cooking Instructions
  1. Boil water in a large pot and add the pasta. Cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until it becomes translucent and soft, about 5 minutes.
  3. Stir in the minced garlic and cook until fragrant for about 30 seconds. Pour in the canned diced tomatoes with their juices, and let it simmer for 5 minutes.
  4. Mix in the heavy cream, reduce the heat to low, and let the sauce simmer until it thickens slightly, around 5 minutes.
  5. Add the shrimp, seasoning generously with salt, pepper, and chopped basil. Cook until the shrimp turn pink and opaque, about 3-4 minutes.
  6. Toss the cooked pasta into the skillet, mixing well with the sauce. Use the reserved pasta water to reach the desired sauce consistency.
