  • 1 lb large shrimp peeled and deveined
For the Zucchini Noodles
  • 4 medium zucchini spiralized
For the Flavor Base
  • 4 cloves garlic minced
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
For the Sauce
  • 1/2 cup dry white wine
  • 1/2 tsp red pepper flakes optional
  • Salt and pepper to taste
For Garnish
  • Fresh parsley

How to Make Shrimp Scampi with Zucchini Noodles
  1. Spiralize your zucchinis into noodles using a spiralizer. Set them aside.
  2. Melt 2 tablespoons of butter with 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the shrimp to the skillet, cooking for about 2-3 minutes until they turn a beautiful pink.
  4. Pour in the dry white wine, scraping the pan to deglaze it, while incorporating the lemon juice, red pepper flakes, salt, and pepper. Allow it to simmer for a couple of minutes.
  5. Toss in the zucchini noodles, mixing everything together gently for about 2-3 minutes until well combined.
  6. Remove from heat and blend in the remaining butter until melted. Garnish with fresh parsley before serving.
