How to Make Southwest Steak Bowls
  1. Start by chopping all your vegetables—bell peppers, red onion, and avocado—and rinsing the black beans and corn.
  2. Coat the sirloin steak with olive oil, chili powder, cumin, salt, and pepper. Allow it to marinate for about 15 minutes.
  3. In a skillet over medium-high heat, sear the marinated steak for about 3 minutes on each side.
  4. Remove the steak and sauté the chopped red onion and bell peppers for about 5 minutes until softened.
  5. Slice the rested steak and put it back in the skillet with the sautéed vegetables, black beans, and corn. Stir until warmed through.
  6. Serve by topping bowls with the steak mixture, creamy avocado, lime juice, and fresh cilantro.
