How to Make Southwest Steak Bowls
- Start by chopping all your vegetables—bell peppers, red onion, and avocado—and rinsing the black beans and corn.
- Coat the sirloin steak with olive oil, chili powder, cumin, salt, and pepper. Allow it to marinate for about 15 minutes.
- In a skillet over medium-high heat, sear the marinated steak for about 3 minutes on each side.
- Remove the steak and sauté the chopped red onion and bell peppers for about 5 minutes until softened.
- Slice the rested steak and put it back in the skillet with the sautéed vegetables, black beans, and corn. Stir until warmed through.
- Serve by topping bowls with the steak mixture, creamy avocado, lime juice, and fresh cilantro.
