Method
 

Cooking Instructions
  1. Begin by chopping the chicken breasts and garlic into bite-sized pieces.
  2. In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the chicken pieces and sauté for about 5-7 minutes until they turn golden brown and are cooked through.
  3. During the last minute of cooking the chicken, sprinkle in the minced garlic and sauté until fragrant, about 1 minute.
  4. Stir in the chopped chipotle peppers and heavy cream (or cream cheese) into the skillet. Let it simmer for 3-5 minutes.
  5. While the sauce is simmering, prepare the pasta according to package instructions. Drain it and reserve a bit of the pasta water.
  6. Add the cooked pasta to the skillet, mixing thoroughly to coat it in the sauce. Stir in grated Parmesan cheese and serve warm, garnished with fresh cilantro.
