Cooking Instructions
- Begin by chopping the chicken breasts and garlic into bite-sized pieces.
- In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the chicken pieces and sauté for about 5-7 minutes until they turn golden brown and are cooked through.
- During the last minute of cooking the chicken, sprinkle in the minced garlic and sauté until fragrant, about 1 minute.
- Stir in the chopped chipotle peppers and heavy cream (or cream cheese) into the skillet. Let it simmer for 3-5 minutes.
- While the sauce is simmering, prepare the pasta according to package instructions. Drain it and reserve a bit of the pasta water.
- Add the cooked pasta to the skillet, mixing thoroughly to coat it in the sauce. Stir in grated Parmesan cheese and serve warm, garnished with fresh cilantro.
