For the Manicotti Filling
  • 15 oz Ricotta cheese well-drained
  • 4 cups Fresh spinach cooked
  • 1/2 cup Parmesan cheese grated
  • 1 large Egg beaten
  • 1 teaspoon Salt
For the Marinara Sauce
  • 28 oz Canned crushed tomatoes
  • 2 tablespoons Olive oil for sautéing
  • 3 cloves Garlic minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
For Assembly
  • 12 pieces Manicotti shells uncooked
  • 1 bunch Fresh basil for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the spinach in a skillet with a touch of olive oil over medium heat until wilted, about 3-4 minutes.
  3. Combine the ricotta, cooked spinach, Parmesan, egg, and salt in a mixing bowl. Stir well until everything is evenly incorporated.
  4. Fill the manicotti shells carefully with the ricotta and spinach mixture using a piping bag or a small spoon.
  5. Prepare the marinara sauce by heating olive oil in a saucepan over medium heat. Sauté minced garlic for about 1 minute, then add crushed tomatoes, oregano, salt, and pepper. Simmer for 10 minutes.
  6. Layer half of the marinara sauce on the bottom of a baking dish. Place the filled manicotti shells on top, then pour the remaining marinara sauce over the shells.
  7. Bake in the preheated oven for about 25-30 minutes, or until the sauce is bubbling and the manicotti is tender.
  8. Garnish with fresh basil before serving.

Notes

Ensure your ricotta is well-drained to prevent a watery filling. Use a piping bag for cleaner filling. You can top with additional grated Parmesan if desired.
