  • 1 cup Crumbled feta cheese For a creamy, salty punch.

  • 1 clove Garlic (minced) For aromatic depth.
  • 2 tablespoons Extra virgin olive oil Adds richness.

How to Make Spring Pea & Feta Dip
  1. Begin by shelling the fresh green peas or, if you’re using frozen ones, simply thaw them in a bowl.
  2. Bring water to a boil in a small pot, then add the peas. Cook them for about 2 minutes until tender and bright green. Drain them well.
  3. In a food processor, add the cooked peas, crumbled feta cheese, Greek yogurt, lemon juice, minced garlic, and olive oil. Blend until smooth.
  4. Taste your mixture and add salt and pepper as needed.
  5. Transfer your dip into a serving bowl, cover with plastic wrap, and refrigerate for at least one hour.
  6. When ready to serve, garnish with extra crumbled feta and fresh herbs. Pair with pita chips or veggie sticks.

Notes

Using fresh peas will give the best flavor, but frozen ones are a great alternative. Do not overcook the peas to maintain color and sweetness.
