How to Make Spring Pea & Feta Dip
- Begin by shelling the fresh green peas or, if you’re using frozen ones, simply thaw them in a bowl.
- Bring water to a boil in a small pot, then add the peas. Cook them for about 2 minutes until tender and bright green. Drain them well.
- In a food processor, add the cooked peas, crumbled feta cheese, Greek yogurt, lemon juice, minced garlic, and olive oil. Blend until smooth.
- Taste your mixture and add salt and pepper as needed.
- Transfer your dip into a serving bowl, cover with plastic wrap, and refrigerate for at least one hour.
- When ready to serve, garnish with extra crumbled feta and fresh herbs. Pair with pita chips or veggie sticks.
