How to Make Sticky Garlic Eggplant
  1. Start by slicing your eggplant into thick rounds, about 1-inch each.
  2. Sprinkle the sliced eggplant generously with salt and let it sit for about 20-30 minutes.
  3. Rinse the eggplant under cool water and pat the slices dry with a kitchen towel.
  4. In a large skillet, heat olive oil over medium-high heat and add the eggplant slices.
  5. Cook for about 4-5 minutes on each side until golden brown and tender.
  6. Mince the fresh garlic and add it to the pan, sautéing for about 1 minute.
  7. Pour in soy sauce and rice vinegar followed by brown sugar, stirring to combine.
